2003 Napa Valley  Cabernet Sauvignon

The 2003 Louis M. Martini Napa Valley Cabernet Sauvignon delivers the highest quality from premium Napa Valley vineyards.

Winemaker Notes

The growing season saw these grapes harvested at optimum ripeness during September and into October with an average of 24.5 brix. Picking took place in the early morning to keep the fruit as cool as possible. Upon arrival at the winery the grapes for this wine were de-stemmed, but not crushed, leaving over 90% whole berries. The Cabernet Sauvignon juice was fermented with temperatures controlled between 76°F-85°F receiving extended skin contact up to 21 days for maximum extraction. 85% of the wine was transferred to French and European oak barrels and aged for 11 months, where the wine completed malolactic fermentation. The wine was racked every 3-4 months prior to bottling, and bottle aged at an optimum of 6 months before release.

Bright tangerine and pear fruit aromas are highlighted by clove and nutmeg. This medium-bodied wine has a crisp acidity and long finish, with pear and toasty butterscotch oak flavors, and a creamy texture.

Winemaker Comments

Toasted Head Chardonnay is aged on its lees. By stirring the lees in each barrel once a week for six months, the wine picks up a mellow, creamy texture, and the oak flavors are softened.

History

Toasted Head Chardonnay, produced from the finest lots of the choicest R. H. Phillips vineyards, was introduced with the 1995 vintage.

Strong Cabernet aromas of black cherry, anise and dark cocoa are enhanced by a hint of vanilla. Medium-bodied flavors show fully ripe, earthy Cabernet fruit with a hint of dusty minerals. Moderate acidity, medium tannins and a touch of new oak highlight the fruit beautifully. Flavors show fine depth and structure thanks to the year's long growing season and outstanding fall weather.

Grapes from sites throughout Napa Valley were harvested at optimal maturity, then de-stemmed and gently crushed into open-top stainless steel fermenters. Fermentation lasted 7-10 days, reaching a peak juice temperature of 80º F, before pressi_level2ng off at dryness. Fifteen percent of the wine underwent malolactic fermentation in barrel, contributing to a richer mid-palate texture and well-integrated new oak component. The wine was further aged in a variety of oak barrels prior to blending and bottling for 18 months in American and European oak barrels.
